1. If cooking dry beans, rinse them and sort out broken/discolored ones. Bring water to boil, add salt and beans and remove from heat. Let sit for one hour.
  2. Return to high heat and add hame bone, carrots, celery, onion, garlic, mustard, and bay. Bring to boil, then simmer one hour.
  3. Remove ham bone. Stir in chopped ham (and canned beans if using them) and simmer 30 minutes. Season and serve
