Gochujang-Glazed Baked Cod

- Black cod or rockfish (2 fillets)
- 1.5 Tbsp Gochujang
- 1 Tbsp honey
- 1 Tbsp sake
- Sesame seeds, scallions
- Wash and dry the filets (2 fillets), season on both sides with salt and pepper. Set to the side, while you prep the sauce.
- For the sauce, mix together the gochujang (1 ½ Tbsp), honey (1 Tbsp), and sake (1 Tbsp). The sauce should be lightly spreadable, so add more sake if it’s too thick
- Set the oven to broil, and set the fillets on an aluminum lined baking sheet, lightly oiled
- Cover the fillets in gochujang sauce on all sides except skin, place skin side down and put under broiler for 7-8 minutes or until internal temperature is 145 degrees F
- Garnish with sesame seeds, scallions, add rice or other side.
- Alternate options include marinating for longer, or wrapping in parchment paper to steam-cook
