Cacio e Pepe


  1. Boil pasta until just shy of al dente (about 10 mins for bucatini). Reserve 3/4 cup pasta water.
  2. Melt butter in skillet. Add pepper and cook about 1 minute. Add 1/2 cup reserved water and reduce. Add pasta, reduce heat to low and add Grana Padano until melted.
  3. Remove from heat, add pecorino and toss until cheese melts. Transfer to warm bowls and serve immediately.
