- 1 dozen eggs
- 3 cups milk
- 1/2 cup white wine
- 3 cups shredded cheddar cheese (feel free to mix with others to total 3 cups)
- 2 lbs. sage Jimmy Dean sausage
- 1 cup chopped green onions
- 1.5 t salt
- 1 t mustard
- 1 t garlic powder
- 12 oz (about half a full loaf) cubed sourdough
- Grease 9x13" baking dish; place 1 in cubes of bread at bottom of dish. Cook sausage and remove from heat (you can save some of the fat to saute onions in place of scallions if desired).
- Mix eggs, milk, wine, salt, mustard, garlic. Stir in cheese, sausage, and onions.
- Pour egg mix over bread; fold gently if desired, but it's fine for the sausage to be on top.
- Cover and chill at least one hour (overnight is best) so bread soaks up eggs.
- Preheat oven to 350, let strata come to room temperature, and bake uncovered for 1 hour. Serve warm.
