1. Grease 9x13" baking dish; place 1 in cubes of bread at bottom of dish. Cook sausage and remove from heat (you can save some of the fat to saute onions in place of scallions if desired).
  2. Mix eggs, milk, wine, salt, mustard, garlic. Stir in cheese, sausage, and onions.
  3. Pour egg mix over bread; fold gently if desired, but it's fine for the sausage to be on top.
  4. Cover and chill at least one hour (overnight is best) so bread soaks up eggs.
  5. Preheat oven to 350, let strata come to room temperature, and bake uncovered for 1 hour. Serve warm.
