Scalloped Potatoes


  1. Melt butter and blend in flour. Form a blonde roux.
  2. Add cold milk, stir with whisk. Season with salt and pepper.
  3. Cook until boiling, reduce heat, and stir in cheese.
  4. Place half of potatoes into lightly greased casserole dish. Pour half of cheese mixture. Repeat with second layer. Top with remaining cheese and paprika for color.
  5. Bake at 350 for one hour.
