- 1.5 c AP flour
- 3.5 t baking powder
- 1 t salt
- 1 T white sugar
- 1.25 c milk
- 1 egg
- 3 T butter, melted
- 1 c blueberries (optional)
- In a large bowl, sift together flour, baking powder, salt, and sugar. Make a well in the center and pour in milke, egg, and melted butter. Mix until smooth. Add fruit if desired.
- Heated a lightly oiled griddle over medium heat. Pour or scoop 1/4 c onto griddle for each pancake. Brown on both sides and serve hot with maple syrup.
